cooked corned beef

tomato, chopped

jalapeno pepper, chopped

Russian dressing

Velveeta cheese, cubed OR mild, medium, or sharp cheddar cheese

fried eggs

Directions

In a 9x9” pan, spread:
1 cup sauerkraut
1 cup cooked corned beef
1 chopped tomato
½ chopped jalapeno pepper
½ cup Russian dressing
1 cup Velveeta cheese cubed or mild, medium or sharp cheddar cheese

Top with:

4 fried eggs

Bake in 350 degree oven for 30 minutes

Serves 4
