Ingredients
Quantity
margarine, softened
1 stick
Jiffy corn muffin mix
8.5 ounces
sharp cheddar cheese, grated
1 3/4 cups
medium Vidalia onion

broccoli, frozen, chopped, thawed, drained
10 ounces
creamed corn
3/4 cups
large eggs

Directions

Preheat oven to 350°F. Stir all of the above ingredients in a large bowl. Well grease a 10" cast iron skillet. Spread above mixture evenly into the skillet. Bake at 350°F for 45 minutes. Serve warm with butter.
