Chop eggs and place them in a large mixing bowl. Dice the green pepper and onion into small pieces. Add the mayo, mustard, salt, pepper, paprika, onion, green pepper, Tabasco, and cheese to the eggs, mixing well. Cook the bacon until crisp. Place bacon on paper towel to soak up any grease. To serve, place bacon, some lettuce, and the egg salad on a piece of toasted rye bread. Cover with second piece and serve.
