oats (quick or old-fashioned)
brown sugar, packed
Libby's Pumpkin Mix
sweetened condensed milk

Preheat oven to 350°F. In a 2-quart mixing bowl, combine flour, oats, brown sugar and chopped pecans. Melt butter in the microwave on HIGH for 1 minute or until melted. Add to dry ingredients; mix well. Press mixture using fingers onto bottom of 10” x 15” jelly roll pan. Bake 15 minutes. Meanwhile, lightly beat eggs in batter bowl using a whisk. Add pumpkin, sweetened condensed milk, spices and salt; whisk until smooth. Pour over crust and spread. Bake 30-35 minutes or until filling is set and knife inserted in center comes out clean. Let cool at room temperature. Cut into squares and serve. Garnish each serving with dollop of whipped topping, pecan halves and additional ground cinnamon. Refrigerate any leftover pie squares. 24 servings.
