3 medium or 2 small sweet potatoes (salt and pepper optional)
1 cup fresh spinach leaves
1/2 cup onion, chopped
1 medium bell pepper (red, orange, or yellow), chopped
1/2 cup feta cheese (herb or tomato basil)
6 eggs, beaten
3/4 cup cheddar cheese
Preheat oven to 350º.
Scrub sweet potatoes and poke holes in the skins with a fork or knife. Cook in microwave or oven until soft. Remove skins and mash with potato masher, fork, or pastry blender. Season with salt and pepper if desired.
In bottom of 9 or 10 inch deep pie plate, layer smashed sweet potatoes. Then layer veggies and feta cheese. Pour eggs over top and sprinkle with cheddar cheese.
Bake for 35-40 minutes.
