  1. Create your egg salad with ingredients and then chill for 10 minutes and you are ready to serve.
  2. First hard cook the eggs, by placing them in a pot of water and letting them simmer for about 10 minutes. Cool and peel them.

    First hard cook the eggs, by placing them in a pot of water and letting them simmer for about 10 minutes.
    Cool and peel them.
    Then place in a bowl and mash.
    Add blended cottage cheese, mayo, pickles, salt and pepper, a dash of lemon juice, and about 1 tsp yellow mustard.
    Stir it all up and portion out.
    Keep cold until you are ready to eat, serve with tortillas, wraps, lettuce, carrots, crackers, etc.
