  1. Dice carrots and potatoes. Saute them in olive oil and season with salt, pepper, and garlic powder. Cook until the inside is soft and the outside is turning golden brown and crispy.
  2. Take these out of the pan and put them in your glass serving dish.
  3. In your heated sauté pan, scramble your eggs until they are cooked, and season with salt and pepper. Put these on top of your cooked carrots and potatoes.
  4. Sprinkle with mozzarella cheese. Turn the broiler on in your oven and put the dish in. Watch the cheese as it melts and turns brown. When it is browned to your liking, take it out.
