  1. Hard boil eggs by placing them into cold water and bringing to a boil. Turn down the heat and simmer for 10-12 minutes.
  2. While the eggs are cooking, mix the avocado, mayo, lemon juice, salt and pepper, ranch seasoning, and green onion.
  3. Cool the eggs by placing them into a bowl of ice water. Once eggs are cool, peel and slice the eggs and add to mixture.
  4. Serve on toasted sourdough, with crackers, in a pita, or on top of a bed of lettuce.
