• Step 1

    First preheat the oven to 425 degrees.
    Next spray two oven safe dish with cooking spray.
    Measure out 1/4 cup canned chicken into each dish.
    Measure out 1/4 cup cottage cheese into each dish.
    Take 1 T of bacon bits and sprinkle over mixture.
    Crack 2 eggs into each dish.
    Sprinkle 2 tsp ranch seasoning into each dish.
    Stir the mixture together.
    Sprinkle with salt and pepper (if desired, the ingredients can be salty by themselves).
    Sprinkle each dish with 1 T more bacon bits on top.
    Sprinkle with shredded cheddar cheese if using.
    Bake for 10-15 minutes or until the inside has set to your liking, should not be jiggly any more.
    Take them out and cool, top with green onion slices.
    Enjoy right away or store in the fridge for up to 4 days for an easy meal prep.
