Ingredients

  • Step 1

    Preheat oven to 425°F. Place potatoes in a small saucepan and cover with water. Bring to a boil over high heat and cook 5 to 8 minutes or just until tender. Drain well.

    Meanwhile place pizza crust on a baking sheet. Spread alfredo sauce over crust and sprinkle with red onion and spinach.
  • Step 3

    Form sliced potatoes into 4 rimmed wells. Break eggs one by one into a small bowl and carefully add to each of the “potato wells”. Bake for 12 to 15 minutes or until egg whites are firm and yolks are desired doneness.
  • Step 4

    Remove from oven and sprinkle with fresh herbs. Generously season with salt and pepper. Cut into 4 slices and serve with hot sauce, if desired.
