  1. Preheat oven to 425°F. Place potatoes in a small saucepan and cover with water. Bring to a boil over high heat and cook 5 to 8 minutes or just until tender. Drain well.
  2. Meanwhile place pizza crust on a baking sheet. Spread alfredo sauce over crust and sprinkle with red onion and spinach.
  3. Form sliced potatoes into 4 rimmed wells. Break eggs one by one into a small bowl and carefully add to each of the “potato wells”. Bake for 12 to 15 minutes or until egg whites are firm and yolks are desired doneness.
  4. Remove from oven and sprinkle with fresh herbs. Generously season with salt and pepper. Cut into 4 slices and serve with hot sauce, if desired.
