• Step 1

    Preheat oven to 375°F. Spray a 10-inch pie pan with cooking spray.

    Spread rhubarb over the bottom of the pie pan. Place milk, eggs, sugar, 1/2 cup baking mix, butter, 1 teaspoon cinnamon, nutmeg, salt and vanilla in a blender. Cover and blend for 1 minute or until well blended. Pour over rhubarb.

    Combine all streusel ingredients in a small bowl. Use a pastry blender or fork to blend the butter into the other ingredients. Sprinkle over the top of the pie.
  • Step 4

    Bake for 45 to 55 minutes or until set in the center (a knife inserted in the center will come out clean). Cool on wire rack. Refrigerate until ready to serve.
