Preheat oven to 350°F. Spray a 9 x 9-inch pan with cooking spray.
Whisk eggs in a large shallow bowl until well beaten. Whisk in milk, vanilla and cinnamon. Dip 3 to 4 slices of bread in milk mixture and place in prepared pan, cutting to fit if necessary. Sprinkle with half of the marshmallows, chocolate chips and graham cracker crumbs.
Dip remaining bread in egg mixture and place over graham cracker crumbs. Pour any leftover egg batter on top of bread. Top with remaining marshmallows, chocolate chips and graham cracker crumbs.
Bake for 25 to 35 minutes or until knife inserted in center comes out clean.
***If cinnamon brioche bread is not available, use plain brioche, challah or cinnamon raisin bread
