- Preheat oven to 350°F. Line a 15 x 10-inch rimmed baking sheet with parchment paper, leaving an overhang for easy removal. Spray parchment paper with cooking spray.
- Cook sausage in a medium skillet over medium heat until browned and cook through. Add green bell peppers and onions. Cook 2 minutes or until just tender. Reduce heat and keep warm.
- Meanwhile, combine eggs, cream cheese, cream, taco seasoning and salt in ablender. Cover and blend until smooth and frothy, about 1 minute. Pour mixture into prepared pan, making sure to spread to the edges.
- Bake omelet for 14 to 18 minutes or until omelet is just cooked through. Remove and immediately sprinkle with cheese. Top with sausage mixture, pimentos, and cilantro.
- Working from one of the shorter ends, roll omelet up tightly using the parchment paper to help lift the omelet. Slice with a serrated knife. Garnish with additional cilantro, if desired.
