  1. Preheat oven to 350°F. Line a 15 x 10-inch rimmed baking sheet with parchment paper, leaving an overhang for easy removal. Spray parchment paper with cooking spray.
  2. Cook sausage in a medium skillet over medium heat until browned and cook through. Add green bell peppers and onions. Cook 2 minutes or until just tender. Reduce heat and keep warm.
  3. Meanwhile, combine eggs, cream cheese, cream, taco seasoning and salt in ablender. Cover and blend until smooth and frothy, about 1 minute. Pour mixture into prepared pan, making sure to spread to the edges.
  4. Bake omelet for 14 to 18 minutes or until omelet is just cooked through. Remove and immediately sprinkle with cheese. Top with sausage mixture, pimentos, and cilantro.
  5. Working from one of the shorter ends, roll omelet up tightly using the parchment paper to help lift the omelet. Slice with a serrated knife. Garnish with additional cilantro, if desired.
