Ingredients

  • Step 1

    Heat a large pot of salted water to boiling. Add spaghetti and cook until just tender, about 10 minutes.

    Cook bacon in a large skillet over medium high heat until crispy. Add garlic and cook 1 minute or until tender. Remove from heat. Whisk together eggs, egg yolk and cheese in a medium bowl.

    When pasta is tender, drain completely reserving 1 cup of pasta water. Return pasta to cooking pot.
    Carefully whisk about ¼ cup of the pasta water into the bowl with the egg and cheese. Add to the skillet with bacon, mixing well. Add to the hot pasta using tongs to completely coat the pasta with the sauce.
  • Step 4

    Add additional pasta water as needed to get a creamy sauce. Generously season with black pepper. Mix in 2 tablespoons parsley. Garnish with remaining parsley.
